New Fashioned

This cocktail combines the smooth notes of vanilla and caramel from Wild Parallel Toasted Barrel Finish with the deep, complex bitter notes of amaro and black walnut bitters with the citrusy sweet notes of falernum to make a fantastic Old Fashioned.

1.5 oz Wild Parallel Toasted Barrel Finish
1/2 oz amaro
1/2 oz falernum
2 dashes orange bitters
2 dashes black walnut bitters

Falernum Recipe:
4.75g cloves, whole
3.5g nutmeg, whole
6g allspice, whole
30g almonds, sliced
55g fresh ginger, sliced
600g demerara syrup
50g water

  • Toast cloves, allspice, nutmeg and almonds over medium heat until fragrant, about 5 minutes.
  • Add all ingredients into a vacuum bag, and sous vide 160F for 3hrs.
  • Transfer to ice bath until cool.
  • Strain out solids.
  • Store in refrigerator.

Yield: 2qt
Shelf Life: 3 weeks

Method: Stirred
Glass: Rocks
Garnish: Orange peel

Pour all ingredients into a mixing glass, add ice and stir. Strain into a rocks glass over fresh ice and garnish.
